Sesame Spaghetti Squash with Asparagus

Ingredients

  • 1 spaghetti squash (2 1/2 to 3 1/2 lb.), rinsed
  • 1 teaspoon minced or pressed garlic
  • 1 teaspoon olive or salad oil
  • 1 cup thinly sliced red bell pepper
  • 2 teaspoons sesame seeds
  • 1 teaspoon minced fresh ginger
  • ½ cup thinly sliced green onions (including tops)
  • + 3 more ingredients
    • Salt and pepper
    • 2 tablespoons Asian (toasted) sesame oil
    • 1 pound asparagus

1. Pierce squash in several places with a sharp knife. Cook in a microwave oven at full power (100%) until soft when pressed, 12 to 14 minutes, turning squash over after 5 minutes.
