  • 4 ½ cups vegetable oil
  • 1 pound sushi-grade tuna steaks
  • 4 medium zucchini
  • 1 adjustable-blade slicer fitted with 1/4-inch julienne blade
  • 1 electric coffee/spice grinder
  • 18 tablespoons hulled sesame seeds
  • 1 deep-fat thermometer
  • + 1 more ingredients
    • 1 tablespoon soy sauce

Put oven rack in middle position and preheat oven to 350°F. Toast sesame seeds in a shallow baking pan in oven, stirring occasionally, until golden, 12 to 15 minutes. Cool completely.
