Simple Roasted Leg of Lamb

  • 2 garlic cloves, crushed
  • 1 (5-pound) boneless leg of lamb, trimmed
  • 1/3 cup fresh lemon juice
  • 1 cup thinly sliced onion
  • 1 tablespoon chopped fresh rosemary
  • 1 tablespoon chopped fresh thyme
  • 3 tablespoons water
  • + 5 more ingredients
    • ½ teaspoon salt
    • 2 tablespoons chopped fresh parsley
    • ¼ teaspoon freshly ground black pepper
    • Cooking spray
    • 2 tablespoons grated lemon rind

Place first 10 ingredients in a food processor; pulse until finely chopped. Place onion mixture and lamb in a large zip-top plastic bag. Seal bag; rub onion mixture into lamb.
