Simple Scrambled Eggs with Spinach and Tomato Recipe
Ingredients
- Sprig of fresh thyme, for garnish (optional)
- 6 eggs
- Pinch of red chile flakes (optional)
- Salt and freshly ground black pepper, to taste
- Handful of grape tomatoes, sliced lengthwise
- One 9-ounce bag fresh spinach
- ½ a red onion, sliced

DIRECTIONS Add 1 tablespoon oil to a large pan over medium heat. When hot, add the onions, and cook, stirring occasionally until soft (but not browned), about 5 minutes.
