Simple Scrambled Eggs with Spinach and Tomato Recipe


  • Sprig of fresh thyme, for garnish (optional)
  • 6 eggs
  • Pinch of red chile flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • Handful of grape tomatoes, sliced lengthwise
  • One 9-ounce bag fresh spinach
  • ½ a red onion, sliced

    • 2 tablespoons extra-virgin olive oil
