  • 1 large shallot
  • 1/3 cup extra-virgin olive oil
  • ¾ teaspoon black pepper
  • 2 large garlic cloves
  • 1 ½ tablespoons balsamic vinegar
  • 1 large sprig fresh rosemary
  • 1 pound boneless top loin steak or sirloin (1 inch thick)

    • freshly ground black pepper
    • 1 ½ tablespoons red-wine vinegar
