Sloppy Split Pea Sandwiches

Ingredients

  • ½ cup baby spinach
  • 2 whole wheat buns, toasted
  • 1 tablespoon tomato paste or 1 tablespoon tomato ketchup
  • 2 tablespoon fine cornmeal
  • Salt and pepper
  • 1 cup dried yellow split peas
  • 1 cup mild salsa or 1 cup crushed tomatoes
  • + 10 more ingredients
    • 2 to 3 cup low-sodium vegetable broth
    • ½ teaspoon chipotle chili powder
    • 1 cayenne pepper
    • 1 teaspoon Italian seasoning
    • 1 teaspoon granulated garlic
    • 1 teaspoon cumin
    • ½ teaspoon paprika
    • ½ bell pepper, diced
    • 1 onion, diced
    • ½ tablespoon olive or canola oil
