Sloppy Split Pea Sandwiches

Ingredients

  • ½ T olive or canola oil
  • 1 onion, diced
  • ½ bell pepper, diced
  • ½ t paprika
  • 1 t cumin
  • 1 t granulated garlic
  • 1 t Italian seasoning
  • + 10 more ingredients
    • 1 dash cayenne pepper
    • ½ t chipotle chili powder
    • 2 to 3 c low-sodium vegetable broth
    • 1 c mild salsa or 1 cup crushed tomatoes
    • 1 c dried yellow split peas
    • Salt and pepper
    • 2 T fine cornmeal
    • 1 T tomato paste or 1 tablespoon tomato ketchup
    • 2 whole wheat buns, toasted
    • ½ c baby spinach

Place the oil in a medium sauce pan over medium-high heat. Add the onions and peppers and saut for 5 to 7 minutes, or until the veggies have softened and are beginning to color.
