Smoked Duck Toasts with Gingered Rhubarb

  • 6 ¾ teaspoons sugar
  • 6 ounces rhubarb stalks
  • 1 ½ teaspoons fresh ginger
  • ¼ cup mayonnaise
  • 1 ½ tablespoons unsalted butter
  • 18 fresh cilantro sprigs
  • 1/3 cup water
  • + 2 more ingredients
    • 18 1/4-inch-thick diagonal slices of baguette (preferably sourdough)
    • 1 3/4-lb smoked duck breast half
