Smoked Duck Toasts with Gingered Rhubarb
Ingredients
- 18 fresh cilantro sprigs
- 1 3/4-lb smoked duck breast half
- 1 ½ teaspoons fresh ginger
- 6 ounces rhubarb stalks
- 1 ½ tablespoons unsalted butter
- ¼ cup mayonnaise
- 6 ¾ teaspoons sugar
- + 2 more ingredients

- 18 1/4-inch-thick diagonal slices of baguette (preferably sourdough)
Preheat oven to 450°F. Brush 1 side of each bread slice lightly with butter, then toast on a baking sheet in middle of oven until golden, about 6 minutes, and cool.
