Smoked Oyster and Potato Salad with Arugula

  • 2 cups arugula or Bibb lettuce leaves
  • 2 tablespoons fresh lemon juice
  • ¾ pound small red potatoes
  • 1 celery rib
  • 3 3/4-ounce can smoked oysters
  • 2 tablespoons extra-virgin olive oil
  • ¼ red onion
  • + 1 more ingredients
    • 2 tablespoons fresh flat-leaf parsley

Boil potatoes in salted water to cover by 1 inch for 12 to 15 minutes or until just tender, then drain. When potatoes are cool enough to handle, cut into 1/3-inch-thick slices.
