Smoky Ricotta Fritters

Ingredients

• 1 15-ounce container ricotta cheese, preferably organic
• ¾ cup finely grated Pecorino Romano cheese
• Cheesecloth
• Olive oil (for frying)
• 1 cup Parmesan cheese, freshly grated
• All-purpose flour
• 3 large eggs

Place sieve over medium bowl; line sieve with double layer of cheesecloth, leaving long overhang.
