Snow Pea, Scallion, and Radish Salad

  • 2 tsp. granulated sugar
  • 4 radishes, trimmed and cut into thin strips (about ½ cup)
  • 1 Tbs. walnut or canola oil
  • 2 scallions (white and green parts), thinly sliced
  • ¼ cup rice vinegar
  • 2 cups (8 oz.) snow peas, trimmed

Put the snow peas in a microwave-safe bowl with 1 Tbs. water. Cover tightly and microwave for 1 minute. Drain and let cool.
