Soft-Boiled Eggs with Warm Croutons and Greens

  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 large eggs
  • 4 anchovy fillets, finely chopped (optional)
  • 2 cloves garlic, thinly sliced
  • 6 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • + 3 more ingredients
    • 4 1/2-inch-thick slices French bread, crusts removed and cut into 1/2-inch-wide sticks
    • 1 teaspoon Dijon mustard
    • 2 bunches frisée or one 5-ounce bag mixed greens
