Soft-Boiled Eggs with Warm Croutons and Greens
Ingredients
- 8 large eggs
- 4 1/2-inch-thick slices French bread, crusts removed and cut into 1/2-inch-wide sticks
- 2 bunches frisée or one 5-ounce bag mixed greens
- 4 anchovy fillets, finely chopped (optional)
- 6 tablespoons olive oil
- ½ teaspoon kosher salt
- 2 tablespoons red wine vinegar
- + 3 more ingredients

- 2 cloves garlic, thinly sliced
- ½ teaspoon black pepper
- 1 teaspoon Dijon mustard
