Soft Peppermint Candy


  • 1 tablespoon plus ¼ cup butter, cubed
  • 2 cups light corn syrup
  • 1-½ cups sugar
  • 2 teaspoons peppermint extract
  • ½ teaspoon salt
  • 6 drops red food coloring, optional
