Soft Sugar Cookies with Almond Icing

Ingredients

  • Multi-colored sprinkles, for decorating
  • 1 ¾ cups confectioners' sugar
  • ¼ tsp. kosher salt
  • ¼ tsp. almond extract
  • 1 tsp. vanilla extract
  • 2 tbsp. half-and-half, at room temperature
  • 5 tablespoons unsalted butter, softened

    • FOR THE ICING:
    • ½ tsp. lemon extract
    • 1 tsp. vanilla extract
    • 1 egg plus 1 egg yolk
    • 8 tbsp. unsalted butter, softened
    • ½ cup soft margarine, such as Gold n'Soft
    • 1 ½ cups confectioners' sugar, sifted
    • ½ tsp. kosher salt
    • ½ tsp. baking powder
    • 1 tsp. baking soda
    • 2 ½ cups flour
