Soft Vegetable Tacos

Ingredients

  • 1 medium onion
  • 2 large garlic cloves
  • 1 jalapeño chili
  • 1 15- to 16-ounce can golden or white hominy
  • 1 tablespoon olive oil
  • 2 red bell peppers
  • ¾ cup tawny Port
  • + 6 more ingredients
    • 1 teaspoon dried oregano
    • 12 corn tortillas
    • 2 cups fresh spinach
    • 1 15- to 16-ounce can pinto beans
    • 1 tablespoon ground cumin
    • 2 tablespoons chili powder

Heat olive oil in heavy large saucepan over medium-high heat. Add onion, red bell pepper, garlic and chili. Sauté until vegetables soften, about 10 minutes.
