Sole with Leeks and Tomatoes

Ingredients

  • 4 5- to 6-ounce sole fillets
  • 1 15-ounce can diced tomatoes in juice
  • 1 cup canned vegetable broth
  • 1 bay leaf
  • 2 teaspoons fresh thyme
  • 2 large garlic cloves
  • 6 tablespoons olive oil
  • + 3 more ingredients
    • All purpose flour
    • 1 ¾ cups leeks
    • ½ cup dry white wine

Heat 3 tablespoons oil in heavy large skillet over medium heat. Add leeks, garlic, thyme, and bay leaf. Sauté until leeks are tender, about 5 minutes. Add vegetable broth and wine; boil 5 minutes.
