Sole with Wine Sauce

Ingredients

  • ½ cup dry white wine
  • 1 ½ cups sliced fresh mushrooms
  • 1 teaspoon reduced-calorie margarine
  • 1/3 cup skim milk, divided
  • 2 tablespoons (1/2 ounce) shredded reduced-fat Swiss cheese
  • 1/8 teaspoon ground white pepper
  • 2 (4-ounce) sole fillets
  • + 7 more ingredients
    • 1 tablespoon all-purpose flour
    • 1 teaspoon lemon juice
    • Vegetable cooking spray
    • ¼ teaspoon minced garlic
    • 1/8 teaspoon salt
    • 1 tablespoon freshly grated Parmesan cheese
    • 2 teaspoons minced shallots

Arrange fillets in an 11- x 7- x 1 1/2-inch baking dish coated with cooking spray. Sprinkle with salt and pepper. Pour wine and lemon juice over fillets. Cover and bake at 400° for 10 minutes. Drain fillets, reserving liquid.
