Soothing Yogurt Mint Raita

Ingredients

  • 2 c plain yogurt
  • 1 c peeled, seeded, chopped cucumbers
  • ¼ c minced red onions
  • ½ c packed fresh mint leaves, chopped (2 tablespoons dried)
  • Kosher salt, to taste

Combine all ingredients well in a nonreactive large bowl. Makes 21/2 cups.
