Ingredients

  • ½ cup chocolate hazelnut spread such as Nutella
  • 1 8-inch (20-cm) springform pan;
  • 3 tablespoons sugar
  • 3 tablespoons water
  • ¼ cup unsalted butter
  • ¾ cup sour cherry jam or preserves
  • 2 tablespoons hazelnuts
  • + 13 more ingredients
    • 3 ½ ounces fine-quality bittersweet chocolate
    • 1 tablespoon balsamic vinegar
    • 1 teaspoon unflavored gelatin
    • 1 ½ cups heavy cream
    • 2 tablespoons calvados (or other type of brandy)
    • 1 parchment paper
    • ½ cup all-purpose flour
    • 2 tablespoons unsweetened Dutch-process cocoa powder
    • ½ cup mascarpone
    • 1/8 teaspoon salt
    • 5 tablespoons heavy cream
    • 3 tablespoons sugar
    • 2 tablespoons unsweetened Dutch-process cocoa powder

In a small saucepan stir together the cherry jam, balsamic vinegar, and calvados. Simmer over low heat until the liquid reduces and thickens, about 10 minutes.
