Southwest Eggrolls

Ingredients

  • 2 cups frozen corn, thawed
  • 1 (15 oz) can black beans, drained and rinsed
  • 2 cups reduced fat shredded Mexican cheese blend (I used Weight Watchers brand)
  • 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry
  • 4 scallions (green onions), chopped
  • 1 (4 oz) can of green chiles, drained
  • 1 t ground cumin
  • + 5 more ingredients
    • ½ t chili powder
    • 1 t salt
    • ½ t black pepper
    • ¼ t cayenne pepper
    • 24 egg roll wrappers (1 package)
