Southwest Twice-Baked New Potatoes
- 1 tablespoon melted butter
- ½ teaspoon salt
- 1 (4.5-ounce) can diced green chiles, drained
- Garnish: paprika
- ½ teaspoon pepper
- 1 tablespoon canola oil
- 2 tablespoons sour cream

- 2 tablespoons buttermilk
- 2 pounds medium-size new potatoes
- ½ cup shredded Cheddar cheese
Cut a thin slice from the bottom of each potato to form a flat base; brush potatoes evenly with oil, and place on a baking sheet.
