Southwestern Breakfast Casserole

  • 12 oz dried Spanish chorizo, chopped
  • 2 jalapeño chiles, seeded and chopped
  • 1 c mild salsa
  • 1 t ground cumin
  • 1 t dry mustard
  • 12 slice whole-wheat bread, crusts removed
  • + 3 more ingredients
    • 12 oz Monterey Jack or sharp Cheddar cheese, shredded
    • 8 large eggs
    • 2 c 2% reduced-fat milk
