Southwestern-Style Macaroni and Cheese

Ingredients

• ¾ c dried elbow macaroni
• ½ c red bell pepper, chopped
• ½ c green bell pepper, chopped
• ¼ lb thickly sliced ham, chopped (about 1 cup)
• 2 T vegetable oil
• 1 ½ T all-purpose flour
• ½ c milk
• + 4 more ingredients
• • ½ c plain yogurt
  • 2 oz Monterey Jack, chopped (about 1/2 cup)
  • 1 t minced pickled jalapeno pepper (wear rubber gloves)
  • ¹/₃ c finely crushed taco chips
