Southwestern-Style Potato Salad

Ingredients

  • ½ cup thinly sliced scallions
  • 1-½ tsp. cumin seeds, lightly toasted and ground
  • ¼ cup extra-virgin olive oil
  • 3 Tbs. fresh lime juice
  • 1 clove garlic, mashed to a paste
  • 3-½ lb. medium waxy potatoes, such as Yukon Gold or red, scrubbed clean
  • 1/3 cup mayonnaise
  • + 10 more ingredients
    • ¾ cup grated Cheddar
    • 2 tsp. chopped fresh oregano
    • 1 tsp. kosher salt
    • ½ tsp. freshly ground black pepper
    • 1/3 cup sour cream
    • Kosher salt
    • ¼ cup plain rice vinegar
    • ¼ cup chopped cilantro
    • 1-¼ cup fresh sweet corn kernels, blanched
    • 1-¼ cup diced red bell pepper

Whisk all the dressing ingredients together in a small bowl.
