Southwestern Summer Pasta

Ingredients

• 2 T pine nuts, toasted
• 4 oz goat cheese, crumbled
• 4 oz fresh angel hair pasta or spaghetti
• ¼ t white pepper
• ¼ t salt
• ½ t chili powder
• 1 T fresh lime juice
• + 5 more ingredients
• • 3 T chopped fresh cilantro
  • 1 jalapeno chile, seeded and finely chopped
  • 3 clove garlic, minced
  • 2 T extra virgin olive oil
  • 3 small tomatoes

Chop the tomatoes coarsely into a bowl, retaining the juices. Add the olive oil, garlic, jalapeno chile, cilantro, lime juice, chili powder, salt and white pepper and mix well. Let stand, covered, for 1 hour. Cook the angel hair pasta using the package directions; drain. Serve the tomato mixtu...
