- ¼ cup red wine
- 1 ½ cups cooked chickpeas (or 1 15-oz. can, rinsed and drained)
- 2 15-oz. cans diced tomatoes
- ¼ tsp. red pepper flakes
- 2 tsp. dried thyme

- 2 Tbs. olive oil
- 1 large leek, white part cut into chunks
- 1 medium red bell pepper, cut into chunks
- 8 oz. (2 cups) sliced white mushrooms
