Ingredients

• 1 ½ cups cooked chickpeas (or 1 15-oz. can, rinsed and drained)
• 2 15-oz. cans diced tomatoes
• ¼ tsp. red pepper flakes
• 2 tsp. dried thyme

  • 3 cloves garlic, minced (1 Tbs.)
  • 2 Tbs. olive oil
  • 1 large leek, white part cut into chunks
  • 1 medium red bell pepper, cut into chunks
  • 8 oz. (2 cups) sliced white mushrooms
