Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 6 cloves garlic, peeled and thinly sliced
  • 2 ½ pounds vine-ripened tomatoes (about 6), peeled, seeded and chopped (see Tip)
  • Salt & freshly ground pepper to taste
  • ½ cup fresh basil leaves, slivered
  • 1 pound whole-wheat spaghetti, or linguine
  • ½ cup freshly grated Parmesan cheese
