Spaghetti With Mint-and-Garlic Tomato Sauce


  • 2 teaspoons sugar
  • ½ teaspoon salt
  • 1 tablespoon chopped fresh mint leaves
  • ½ teaspoon freshly ground pepper
  • 12 ounces uncooked spaghetti
  • 3 pounds plum tomatoes, seeded and chopped
  • 4 garlic cloves, minced
  • + 2 more ingredients
    • 1 tablespoon olive oil
    • ¼ cup grated Parmesan or Romano cheese

Cook spaghetti according to package directions, omitting salt and oil. Drain and set aside. Sauté garlic in hot oil in a large skillet over medium-high heat 1 minute.
