Ingredients

  • 1 tablespoon minced fresh or 1 teaspoon dried oregano
  • ¼ teaspoon salt
  • 4 large eggs
  • 1/8 teaspoon pepper
  • 1 ½ cups sliced potato
  • ½ cup chopped red bell pepper
  • Cooking spray
  • + 6 more ingredients
    • ½ cup (2 ounces) shredded part-skim mozzarella cheese
    • ½ teaspoon olive oil, divided
    • ½ cup chopped onion
    • 8 large egg whites
    • 1 garlic clove, minced
    • ¼ cup sliced pitted manzanilla (or green) olives

Place potato in a saucepan; cover with water. Bring to a boil; reduce heat, and simmer 15 minutes or until tender; drain. Cool, dice, and set aside. Heat a medium nonstick skillet over medium heat.
