Ingredients

  • 1 pound (1-inch-thick) slices peeled parsnip
  • ½ teaspoon vanilla extract
  • 3 cups all-purpose flour
  • Cooking spray
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • ½ cup granulated sugar
  • + 15 more ingredients
    • ½ cup 1% low-fat milk
    • ½ cup apple juice
    • ½ teaspoon salt
    • ¼ cup chopped pecans, toasted
    • 2 tablespoons butter
    • Cake:
    • 1 teaspoon ground nutmeg
    • ¾ cup 1% low-fat milk
    • Icing:
    • 5 tablespoons butter, melted
    • 1 cup packed dark brown sugar
    • ¼ teaspoon salt
    • 2 teaspoons baking soda
    • 1 ½ cups sifted powdered sugar
    • 1 cup packed dark brown sugar

To prepare cake, preheat oven to 350°.Place the parsnip in a saucepan; cover with water. Bring to a boil, reduce heat, and simmer over medium heat 20 minutes or until tender.
