  • 2 tsp. coarsely ground black pepper
  • 1 Tbs. kosher salt
  • 2 tsp. chopped fresh thyme (or rosemary)
  • 3 cloves garlic, minced
  • 2 tsp. crushed fennel seeds
  • 1-½ Tbs. olive oil
  • 3-bone standing rib roast (6 to 7 lb.), chine bones removed

Crush the garlic with the salt in a mortar and pestle or mix it well in a small bowl. Mix in the pepper, thyme or rosemary, fennel seeds, and olive oil.
