Spiced and Sour Mushroom Soup ( Tom Yam Hed )

Ingredients

  • 3 tablespoon lime juice
  • 1 tablespoon apple concentrate
  • 3 tablespoon galangal
  • 90 g oyster mushrooms
  • 3 kaffir lime leaves
  • 4 tablespoon miso paste
  • 3 tablespoon lemongrass
  • + 6 more ingredients
    • 600 ml Vegetable Stock
    • or honey
    • 60 g cherry tomatoes
    • 90 g straw mushrooms
    • 3 bird's eye chiles
    • 3 medium shallots

In a saucepan, bring vegetable stock, shallots, galangal, lemongrass, kaffir lime leaves and chiles to a boil. Continue to boil for 4-5 minutes. Add oyster and straw mushrooms and cherry tomatoes. Once cooked remove from heat and season with miso paste, lime juice and apple concentrate.
