Spiced Apple-Pomegranate Cider


  • 1 gallon apple cider
  • 3 (2-inch-long) strips lemon rind
  • ½ vanilla bean
  • 5 star anise
  • 2 cinnamon sticks
  • 2 cups pomegranate juice
  • 6 whole cloves

Combine the first 5 ingredients in a large stockpot over medium-high heat; bring to a boil. Reduce heat to low. Add the vanilla bean; cover and simmer 15 minutes.
