Spiced banana loaf cake with chocolate chunks

Ingredients

  • 1 tbsp demerara sugar
  • 1 egg, lightly beaten
  • 2 ripe bananas (about 250g, peeled weight)
  • 100g chocolate chunks (ideally 70% chocolate)
  • 125g light muscovado sugar
  • 100g unsalted butter, cut into small pieces
  • Good pinch of sea salt
  • + 2 more ingredients
    • 250g self-raising flour
    • 20 cardamom pods
