Spiced Bran Muffins

Ingredients

• 2 cup buttermilk
• 2 eggs
• ½ cup honey
• 1 cup sugar
• ½ cup butter, softened
• 1 cup boiling water
• ¾ cup dried figs, chopped
• + 8 more ingredients
• • 2 cup toasted wheat bran cereal (such as Wheat Chex)
  • 1 teaspoon salt
  • ¹/₈ teaspoon ground allspice
  • ¼ teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon
  • 2 teaspoon baking soda
  • ½ cup soy flour
  • 2 cup all-purpose flour

Preheat oven to 400F.  Line 24 muffin cups with muffin papers.  Stir flours, baking soda, spices and salt in a small bowl to blend.
