Spiced Carrots

Ingredients

  • 1 pound carrots, peeled and sliced into thin rounds
  • 1 tablespoon black peppercorns
  • 1 tablespoon fennel seed
  • 1 tablespoon coriander seed
  • 1 tablespoon cumin seed
  • 1 fresh bay leaf
  • 1 cinnamon stick

    • 1 hot pepper, such as habanero
    • 2 cloves garlic
    • 2 ¼ teaspoons brown sugar
    • 2 ¼ teaspoons coarse salt
    • 1 ¼ cups apple cider vinegar
