Spiced Dark Fruitcake

Ingredients

• 1 cup candied orange zest, coarsely chopped
• 1 ½ cups Medjool dates, coarsely chopped
• 1 ½ cups golden raisins, also known as sultanas
• 2 cups almonds, coarsely chopped
• 2 cups dried, unsulfured apricots, coarsely chopped
• ½ cup brandy
• 3 tablespoons freshly grated "lemon":http://www.chow.com/ingredients/43 zest (from 3 to 4 lemons)

  • 2 cups packed dark brown sugar
  • 3 sticks (12 ounces) unsalted butter, at room temperature
  • 1 teaspoon kosher salt
  • 1 teaspoon freshly grated nutmeg
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground allspice
  • 2 teaspoons baking soda
  • 3 cups all-purpose flour
