Spiced Lamb Loin with Grilled Ratatouille
Ingredients
- 1 fat-trimmed lamb loin, boned, rolled, and tied (about 1 lb. boned; see notes)
- Salt and pepper
- 1 tablespoon lemon juice
- ¼ teaspoon ground cinnamon
- 1 ½ tablespoons fresh thyme leaves or 1 1/2 teaspoons dried thyme
- ½ teaspoon ground cumin
- ¼ teaspoon ground allspice

- ½ teaspoon grated lemon peel
- 1 tablespoon chopped garlic
- 2 tablespoons chopped shallots
- 2 teaspoons Dijon mustard
- Grilled ratatouille
- 1/8 teaspoon cayenne
- ½ cup olive oil
1. Rinse and dry lamb. 2. In a blender, combine olive oil, shallots, garlic, thyme leaves, lemon peel and juice, mustard, cumin, allspice, cinnamon, and cayenne; whirl until coarsely puréed.
