Spiced Lamb Samosas

Ingredients

  • 1 tbsp vegetable oil
  • 1 small sweet onion , (12 oz/375 g), diced
  • 1 lb ground lamb
  • 2 cloves garlic , finely grated
  • 1 tbsp finely grated gingerroot
  • 3 tbsp minced hot green pepper , (seeded if desired)
  • 1-¼ tsp garam masala

    • ¾ tsp ground cumin
    • ¾ tsp ground coriander
    • ¼ tsp ground allspice
    • ¼ tsp ground cinnamon
    • ¾ tsp salt
    • 1/3 cup green pea
    • ¼ cup chopped fresh coriander
    • ¼ cup chopped green onions
    • 16 square (8 inch/20 cm) sheets thawed spring roll wrappers , (such as Ty Spring Roll Pastry)
    • 1 egg yolk
    • 4 cups vegetabIe oil , for deep frying, enough to submerge food
