  • ½ teaspoon salt
  • 1 ½ cups sour cream
  • 4 pounds red-skinned sweet potatoes (yams)
  • 1 tablespoon ground cumin
  • ¾ teaspoon ground ginger
  • ¾ teaspoon ground cinnamon
  • 1 tablespoon curry powder

    • 3 cups shredded extra-sharp white cheddar

Preheat oven to 350°F. Cook sweet potatoes in large pot of boiling salted water until just tender, about 20 minutes (do not overcook). Drain well and cool.
