Ingredients

  • 1 tablespoon olive oil
  • 1 large onion, chopped
  • 3 ¾ cups carrots, sliced
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon hot chili powder
  • 3 ¾ cups vegetable stock
