Spicy Macaroni and Cheese with Tomatoes and Cracker Crumb Crust


  • 2 teaspoon paprika
  • ½ cup crushed Ritz crackers or similar crackers
  • ½ cup grated parmesan cheese
  • Cracker Crumb Crust:
  • 1 pound penne, elbows or rigatoni pasta, cooked and drained well
  • 1 ½ cup low-fat shredded cheddar and monterey jack cheese mixture
  • 2 cup canned diced tomatoes, undrained

    • 2 cup 2 percent milk, warmed
    • ¼ cup flour
    • 1 jalapeno, stemmed, seeded and chopped
    • 1 ½ cup chopped yellow onions
    • 3 tablespoon unsalted butter
