  • 1 14.5-oz. can diced tomatoes with chiles
  • 1 medium sweet potato, peeled and cut into 1-inch chunks (about 2 cups)
  • + 5 more ingredients
    • 2 cloves garlic, minced (about 2 tsp.)
    • 1 Tbs. grated fresh ginger
    • 1 celery stalk, chopped (about ½ cup)
    • 1 medium onion, diced (about 1 cup)
    • 2 Tbs. olive oil
