Spicy Tomato, Pepper, Cucumber, Mint, and Parsley Salad

  • 3 tablespoon fruity extra virgin olive oil
  • 1 cup fresh flat-leaf parsley
  • sea salt
  • 2 teaspoon lemon zest
  • 1 tablespoon balsamic vinegar
