Spinach, Goat Cheese & Chive Quiche

  • 10 oz. fresh spinach, stemmed and washed
  • ½ cup semi-dry finely crumbled goat cheese, such as Bucheron
  • 1-½ cups heavy cream
  • Kosher salt and freshly ground black pepper
  • 2 large eggs
  • 2 to 3 Tbs. finely snipped chives
  • 2 large egg yolks
  • + 3 more ingredients
    • 1 partially baked tart shell in a 10-inch porcelain quiche pan or a 10-½- to 11-inch metal tart pan
    • 1/3 cup freshly grated Parmigiano-Reggiano
    • 1 Tbs. finely minced fresh thyme

In a large saucepan, bring 1 cup water to a boil. Add the spinach and cook until just wilted, 2 or 3 minutes. Drain and set aside. In a bowl, combine the eggs, yolks, and heavy cream.
