  • 8 oz. ricotta
  • 1 tsp. nutmeg
  • ½ cup grated Grana Padano cheese, plus more for serving
  • 2 eggs
  • 1 cup bread crumbs
  • 1 lb. spinach, blanched and finely chopped
  • 2 Tbs. chopped sage
  • + 4 more ingredients
    • Freshly ground pepper
    • Kosher salt
    • All-purpose flour, as needed
    • 8 Tbs. unsalted butter
