Spinach-Ricotta Skillet Lasagna

Ingredients

  • Nutmeg
  • ¼ teaspoon garlic powder
  • 1 large egg
  • Salt and pepper
  • 1 large egg
  • 1 cup shredded part-skim mozzarella
  • 4 ounces no-boil lasagna noodles (about half a box)

    • 1 10-oz. package frozen chopped spinach, thawed and squeezed dry
    • 1 ½ cups ricotta
    • ½ cup grated Parmesan
    • Nutmeg

Mix mozzarella, Parmesan, garlic powder, 1/4 tsp. pepper and a pinch of nutmeg. In a separate bowl, whisk ricotta with egg and spinach until blended and smooth. Season with salt and pepper.
