Spinach Salad with Candied Almonds & Lemon Vinaigrette

Ingredients

• 2 tablespoons freshly squeezed lemon juice (from about 1/2 lemon)
• ½ teaspoons finely minced garlic
• 1 tablespoon Dijon-style mustard
• 4 ounces fresh goat cheese, crumbled
• ½ cup dried cranberries or favorite fresh berries
• Candied almonds (recipe below)
• 1 (5-ounce) bag baby spinach
• + 3 more ingredients
• • ½ cup extra-virgin olive oil
  • 1 teaspoon sugar
  • 1 teaspoon white wine vinegar

Place mustard and garlic in a medium bowl. Gradually whisk in lemon juice, vinegar and sugar, making a smooth mixture. Gradually whisk in olive oil.
