Spirited Fruit Salad
- ¼ cup flaked sweetened coconut, toasted
- 3 tablespoons dark rum
- 3 kiwifruit, peeled and cut into wedges
- 3 tablespoons light brown sugar
- 2 cups halved strawberries (about 7 large)
- 3 ruby red grapefruit
Peel and section grapefruit over a bowl; discard membranes. Combine grapefruit sections, strawberries, and kiwifruit in bowl. Combine brown sugar and rum in a small bowl, stirring well. Add rum mixture to fruit, tossing gently to combine. Cover and chill until ready to serve. Sprinkle with toaste...
