Spirited Fruit Salad


  • ¼ cup flaked sweetened coconut, toasted
  • 3 tablespoons dark rum
  • 2 cups halved strawberries (about 7 large)
  • 3 kiwifruit, peeled and cut into wedges
  • 3 tablespoons light brown sugar
  • 3 ruby red grapefruit

Peel and section grapefruit over a bowl; discard membranes. Combine grapefruit sections, strawberries, and kiwifruit in bowl. Combine brown sugar and rum in a small bowl, stirring well.
