Ingredients

  • 1 1/3 teaspoons baking powder
  • 1/3 cup freshly grated Parmesan cheese
  • 1 1/3 tablespoons unsalted butter
  • 1 cup stone-ground white cornmeal
  • 1/3 cup buttermilk
  • 2/3 teaspoon baking soda
  • 1 ¾ cups milk
  • + 5 more ingredients
    • 2 teaspoons sugar
    • 2/3 teaspoon salt
    • 1 cup whipping cream
    • 4 teaspoons chopped fresh chives
    • 4 large eggs, separated

Heat first 4 ingredients in a heavy saucepan over medium-high heat 6 to 8 minutes (do not boil). Remove from heat. (Mixture will curdle.) Combine cornmeal and Parmesan cheese in a large bowl.
