Squash Muffins

Ingredients

  • ¼ teaspoon salt
  • 1 teaspoon baking soda
  • ½ cup butter or margarine, softened
  • 1 cup cooked, mashed squash
  • 1 egg, beaten

  • 1 ¾ cup all-purpose flour

    • ¾ cup firmly packed brown sugar
    • 1 cup cooked, mashed squash

Combine butter, sugar, and molasses, beating well. Add egg; beat well. Stir in squash. Combine flour, soda, and salt; add to squash mixture, mixing well. Stir in pecans. Spoon batter into greased muffin pans, filling two-thirds full. Bake at 375° for 20 minutes.
